Cornwall based Chef Adam Banks takes inspiration from the heart of Italian cooking, the richness of local Cornish produce, and the thoughtful simplicity of Danish kitchen culture.
His approach to food is rooted in sustainability and seasonality, celebrating the best of what Cornwall has to offer.
Adam’s story in food began at the sink, scrubbing pans and washing lettuce as a young kitchen porter. It wasn’t long before his passion and determination carried him into the heart of the kitchen, eventually becoming Head Chef at Jamie Oliver’s Fifteen Cornwall. Leading a team and cooking for guests with the best of Cornwall’s produce cemented his belief that food should be honest, seasonal, and made to be shared.
When Fifteen closed its doors in 2019, Adam embraced the chance to carve his own path. He poured his creativity into pasta masterclasses, bringing people together over handmade dough and into supper clubs that popped up in bakeries, wine shops, art galleries, and the homes of friends and strangers. Each project became a way to connect with people through food, telling stories of ingredients, seasons, and place.
In 2022, Adam opened his first restaurant, Verbena, a celebration of the values that shaped his cooking. Now, as he prepares to launch his next restaurant, he continues to share his food more intimately through bespoke private dining experiences. Crafted around the best seasonal ingredients, these experiences bring Adam’s signature style into your home, offering a personal connection to the food and stories that inspire him.
