Adam Banks

Adam is a chef inspired by the joy of Italian food, the ethics of gathering local ingredients and the culture of Danish kitchens.

All of these sources of inspiration feed into each of Adam’s meticulously prepared dishes which are full of passion, integrity, love and skill.

Adam has always known his heart was in food, from a young kitchen porter, washing heads of lettuce to running the kitchen as Head Chef of Jamie Oliver’s Fifteen, Cornwall.

Since closing the doors of Fifteen in 2019, Adam has been busy creating his own business which has ebbed and flowed with changing climates over the past few years. Whether that was hand delivered pasta boxes, pasta masterclasses in the stuidio or supper clubs which popped up in some of our favourite South Western locations, including bakeries, wine shops, art galleries and spilling onto the dining tables of peoples homes.

Adam launched his first restaurant at the end of 2022 with business partner and fellow Fifteen chef, Mariana. Verbena is an intimate, restaurant on the North Coast of Cornwall, in the heart of Newquay.
